Ingredients

  • 1 cup chopped chocolate (dark, semi-sweet, or white)

  • 2 cups heavy whipping cream

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

Instructions

  1. In a heatproof bowl, warm ½ cup of the heavy whipping cream.

  2. Add the chopped chocolate and vanilla extract. Stir until the chocolate is fully melted and the ganache is smooth. Let it cool to room temperature.

  3. In a separate bowl, whip the remaining heavy cream with powdered sugar until medium peaks form.

  4. Gently fold one-third of the whipped cream into the cooled chocolate ganache.

  5. Continue folding in the rest of the whipped cream until the mixture is smooth and airy.

  • Avoid overheating the cream and chocolate; the mixture should be warm enough to melt the chocolate but not hot.

  • Keep the whipping cream cold for easy, stable peaks.

  • If the mousse feels grainy, the chocolate wasn’t fully melted or the cream was overwhipped.

  • If it doesn’t set properly, chill longer or gently fold in a bit more whipped cream.
